Overview

Line-caught in the East China Sea and flash-frozen aboard the vessel within hours of harvest, this golden-hued ocean favourite arrives with its scales intact and its flavour locked in. Each fish is plump and streamlined, weighing 400 to 600 g.

Ways to Enjoy

Steam — score the body, lay ginger and scallion on top, steam over high heat for 8 minutes, then finish with seasoned soy and a pour of sizzling oil.
Braise — sear both sides until golden, then simmer for 10 minutes in a soy, dark soy, rock sugar and rice wine glaze.
Pan-fry — salt for 15 minutes and cook in a hot skillet until crisp on both sides; serve with pepper-salt.
Soup — saute pickled mustard greens, add water, simmer the fish for 5 minutes for a creamy, savoury broth.

Storage

Keep at -18°C for up to 12 months. Once thawed, enjoy within 24 hours and do not refreeze. For the best texture, thaw slowly in the refrigerator at 0-4°C for 4 to 6 hours.
